With the unique design of the Medina River Fish Fryer the cooking oil above the heating element stays at the desired temperature of 325 to 350 degrees, while the oil in the lower chamber remains cool the unique design allows any debris that falls from the fish or other foods being cooked, to pass through the hot oil in the frying chamber and into the cooler oil in the lower chamber. As a result, the Medina River Fish Fryer's uniqie design prevents this debris from burning and scorching or continuously circulating in the upper chamber's cooking zone. Therefore, the cooking oil does not go rancid and stays fresh longer. We recommend that you replace the cooking oil after 25 to 30 uses.
